CUCUMBER DOSA

    Cucumber dosa combines all healthy ingredients like cucumber,rice,coconut. Cucumber dosa is very easy to prepare.It  makes a very healthy yummy break fast.The batter for this dosa need not fermentation.It can be used immediately after grinding.Hope u enjoy preparing this healthy tasty dosa!!!

Ingredients:

Cucumber (grated),1 inch piece of ginger(chopped),green chilies 2-3(chopped finely),2 tbsp Jaggery,rice-1 cup,turmeric powder half tsp,salt,coconut 1-cup,oil for greasing the pan.

Method:


  • Soak the rice about 3 hours,drain the water and grind together cucumber,coconut,green chilly,turmeric powder, and jaggery.
  • Make semi thick batter.
  • Add chopped ginger,salt and mix well.
  • Heat a frying pan and spread few drops of oil.
  • take a ladle full of batter and pour it on to the pan and spread it slightly from behind the ladle.
  • Make a round shape dosa.
  • Sprinkle little oil on top,cover the lid and cook for a minute on medium flame and roast it.
  • Flip and cook for half a minute.
  • Remove from pan and enjoy it with coconut chutney.


Note:


  • Do not add water first while grinding,the cucumber has lots of water,if you feel dry,then add the water.
  • Do not peel the cucumber while making the cucumber dosa,it has maximum nutrition.

POHA AND OATS CUTLET

  This is very healthy recipe and easy to make. just need few ingredients like Oats,Poha and Potato.In this recipe oats are the main ingredients,its very healthier.
  Another ingredient is poha(flattened rice or flake of rice). Rice flakes are normally used to prepare snacks and easy fast food.It include good nutritional value.You could have them as breakfast or snacks.So try this healthy cutlets, to enjoy with some ketchup :)

Ingredients:

1 cup poha(rice flakes),1 cup oats,potato-2(boiled & mashed),onion-1(finely chopped),green chilly-1(finely chopped),ginger small piece(finely chopped),coriander leaves(finely chopped),garam masala powder,fennel seed-1tsp,turmeric powder-1tsp,pinch of asafoetida,semolina half cup, salt as per taste.

Method:


  • Take poha and oats in a strainer,pass water through it,allow water to strain.
  • Combine all the ingredients except oil.
  • Now make small balls and slightly flatten it.
  • Spread the semolina on plate &coat them from both the side.
  • Shallow fry them,from both side fry it until golden brown.
  • Place the fried cutlets over tissue paper.
  • Serve the hot cutlet with sauce or chutney.  


Note:


  • For more taste add grated cabbage or carrots for cutlets.
  • semolina is optional for this cutlet.I prepared this with using semolina.

GHEE RICE

Ghee rice  is a fragrant recipe,this is one of the most simplest and easiest recipe and can be prepare very quickly.Ghee rice is rich and tasty recipe when it served with chicken gravy,korma or raita. The taste and aroma of this rice will make you crazy to eat...:)

Ingredients:

Basmati rice 1 cup (washed and drained),onion 1 large( finely sliced),cloves-5,cardamom-6, cinnamon stick-2 pieces,bay leaf-2, cashew nuts 10-12( break into small pieces),raisins 10-12,ghee-5 tbsp,water-2 cup(hot),salt.

Method:


  • Heat a cooker and add 3 tbsp ghee allow it to melt.
  • Add cardamom,cinnamon,cloves and bay leaves allow to splutter.
  • Add onion and saute till golden brown.
  • Add cashew nuts saute till golden brown,add raisins and saute for a few minutes.
  • Add the drained rice and saute on low flame for 5m.
  • Add 2 cup water,salt to taste bring to a boil.
  • Reduce flame to low,place lid and cook till the rice is soft.
  • Remove lid and mix well.


Note:


  • While boiling the rice check the rice whether it boiled or not because it may chance of over cook.
  • Fry onion golden brown,remove some onions and keep aside for the garnish.
  • In this procedure need not to use whistle on it.

CABBAGE PAKODA

Pakoda is a popular road side snack in India.Cabbage Pakoda is simple and easy to prepare.Today i am sharing a Cabbage Pakoda recipe :)...this Pakoda combines all healthy ingredients like Cabbage,besan flour,ginger garlic paste...This snack is loved by every one :)...The crunchiness of the fried cabbage give more flavor.Hope u enjoy preparing and eating this healthy tasty Pakoda.

Ingredients:

1 cup (finely chopped) cabbage,half cup beasan flour,2-3 green chilly (finely chopped),coriander leaves (finely chopped),turmeric powder half tsp, red chilly powder half tsp,curry leaves (finely chopped),garam masala powder(optional) ginger garlic paste,asafoetida small pinch,salt,oil,tsp of hot oil.

Method:


  • In a bowl take beasan flour.
  • Add finely chopped cabbage,coriander leaves,green chilies,curry leaves to it and mix well.
  • Add all masala,ginger garlic paste, salt and mix well.
  • Add little water and tsp of hot oil let the dough come together.
  • Make the batter but not very thin.
  • Meanwhile heat oil in kadai for deep frying.
  • Drop small portions of batter into the oil.
  • Add 5-6 of the batter individually in oil and let them fry over medium flame.
  • Flip them in between to let them fry evenly.
  • Drain the pakoda on to a tissue and repeat the same process with remaining batter.
  • Serve hot and crispy pakoda with chutny or sauce.


Note:


  • If you are drop batter in hand make thick batter.
  • Add hot oil while making dough ,it make pakoda very crispy.
  • Garam masala powder is optional,it gives good flavor for pakoda.
  • Same ingredients instead of cabbage you can add onion and make onion pakoda also.

EGG BURJI

Egg burji is quick and easy to prepare.It can be served at breakfast,lunch or dinner.Eggs are rich source of protein and so this dish is also nutritious.Capsicum and other similar veg can be added to the dish,this will add more taste for this dish..So try simple recipe in your home and enjoy it..:)


Ingredients:

Egg 2-3, onion 2( finely chopped), tomato small (finely chopped), ginger (finely crushed) 1 tsp,green chilly 2 turmeric powder half tsp,chilly powder half tsp,garam masala powder (optional),salt,mustard seed,curry leave,coriander leave hand ful.


Method:


  • Heat oil in pan,add mustard seeds when it start spluttering add curry leave.
  • Add onions and ginger,green chilly fry them till they turn golden brown.
  • Add tomatoes once the tomatoes are cooked,mashed it.
  • Now add the blended egg and continuously stir it for 5m.
  • Add red chilly powder,turmeric powder,garam masala powder,salt mix well.
  • Stir continuously and cook till the eggs dry up.
  • Add coriander leaves and mix well.
  • Now egg burji is ready to serve.


You can serve this with rice ,roti and bread.

MASALA BREAD

Ingredients:

bread slices,egg 3,tomato 1 finely chopped,onion 2 finely chopped,turmeric powder half tsp,garam masala powder 2-3 tsp,red chilly powder 1 tsp,green chilly 2-3, ginger one small piece, curry leave,mustard seed,oil, coriander leave hand full,salt.


Method:


  • Cut the bread slices into small pieces.
  • Take a bowl break the egg and beaten the egg well keep aside.
  • Heat oil in pan add mustard seed ,curry leave.when it start pop up
  • Add chopped onion ,green chilly,ginger saute well till it turn light golden brown.
  • Add tomato saute well, once tomato cooked well.
  • Add turmeric powder,chilly powder,garam masala powder mix well.
  • Add beaten egg and salt mix well.
  • Add bread pieces and saute well continuously.
  • Add coriander leave and saute 1-2 minutes.


Tips:

  • while beating the egg add little salt mix well.
